A Yummy Salad for the Summer

August 2, 2006 / by lunarhunk

Ray introduced me to this simple side dish not long after we met. It is a quick and easy to make, and it is perfect for a hot summer day.

You take two small cans of mini-shrimp, a prepared pound of pasta, and a jar of sliced green olives. Mix in a bowl with fat free mayonnaise to taste. Chill and serve with whatever you would like.

Mmm! Mmm! Good!

Allen and I went to the 15th Street Fisheries which is on the inter-costal with all the yachts coming and going--we had a mixed seafood sizzler platter in a very cholesterol filling sauce and then split(!) a piece of double chocolate cake--talk about a perfect dish for a hot summer day--of course we sat inside in the a/c! [LOL]
Your side dish is too fattening--1/2 pound of pasta each? Olives? Mayonnaise--even fat free it is 50 calories each LEVEL tablespoon--and a can EACH of shrimp? Okay, okay, don't compare with my lunch![LOL]

Mmmmmm ... Your dinner sounds really yummy!
You are not supposed to eat it all in one sitting! It usually lasts quite a few meals. We usually have it in place of a baked potato with dinner.
